Zucchini Meatloaf 1 1/2 c Zucchini -- grated
1 lb Turkey -- ground
1 md Onion -- chopped
1/2 c Combined red and green pepper -- chopped
2 c Bread crumbs
1 Egg white
1 cn Tomato paste -- (6 oz)
1 tb Parsley
1 ts Tarragon
1 tb Basil
1/2 ts Black pepper
1 c Cheddar cheese -- grated
Preheat oven at 350. Prepare loaf pan with cooking spray. In a
mixing bowl, combine zucchini, turkey, onion, peppers, bread crumbs,
egg white, tomato paste, parsley, tarragon, basil, and black pepper.
Press mixture into prepared pan and cover with foil. Bake for 1 1/4
hours. Sprinkle cheese over the top. Return to oven and bake another
10 minutes.
