Mexican Meatloaf 1/2 lb Lean ground beef
1 Jar (8-ounce) mild tomato salsa
1 ts Ground cumin
1/2 c Frozen corn
1/2 c Frozen, diced green peppers
1/2 c Plain bread crumbs
Salt and pepper
Preheat oven to 450 degrees. Line a baking sheet with foil. Mix all ingredients. Divide mixture in half and place each half on baking sheet. Shape into 2 loaves about 6 inches by 3 inches. Bake for 20 minutes. Remove from oven and serve with Jalapeno Mashed Potatoes (recipe follows). Makes 2 servings.
