Fiesta Meatloaf 1/2 c Chopped onion
1/2 c Chopped celery
1/4 c Chopped green pepper
2 tb Butter
12 oz Heinz chili sauce
1 1/2 lb Ground beef, lean
1 c Soft bread crumbs
1 ea Egg, slightly beaten
1/2 ts Salt
1/4 ts Pepper
Saute onion, pepper, and celery, in butter, until tender. Stir in chili sauce. Combine 1/2 cup sauce mixture with all other ingredients. Form into a loaf in a shallow baking pan. Bake at 350 deg f for 1 hour. Let stand for five minutes before slicing. serve remaining sauce over meatloaf. makes 4 to 6 servings.
