Stuffed Meatloaf 1 lb Ground beef
1 lb Ground pork
1 c Breadcrumbs, dry
1/2 c Carrot; shredded
1/2 c Milk
1/4 c Onion; chopped
2 Eggs; beaten
2 ts Salt
1 ts Worcestershire sauce
1/8 ts Pepper
4 oz Mushrooms; drained & chopped
1 tb Onion
2 tb Butter (or marg.); melted
2 c Breadcrumbs, soft
1 tb Parsley, fresh; chopped
1/2 ts Poultry seasoning
1/4 ts Salt
Combine first 10 ingredients in a large mixing bowl, mixing well.
Shape mixture into a 14x8" rectangle on well greased aluminum foil.
Saute mushrooms and 1 tablespoon onion in butter until tender; add
remaining ingredients, mixing well. Spread evenly over meat moxture,
leaving a 1/2" border; roll up jellyroll fashion, beginning with long
side. Bring up sides and ends of foil, and fold over roll to seal
securely; place in a 15s10x1" jellyroll pan. Bake at 375 degrees for
1 hour; open foil, and continue baking 15 minutes.
