Swiss Meatloaf 1 Large egg
1/2 c Evaporated milk
1 ts Salt
1/2 ts Pepper
1 1/2 lb Lean ground beef
1 c Ritz cracker crumbs
3/4 c Grated Swiss cheese, divided
1/4 c Finely chopped onion
3 Strips bacon, cut into 1-inch pieces
Beat egg in a large mixing bowl. Add evaporated milk, salt and
pepper; mix well. Add ground beef, cracker crumbs, 1/2 cup cheese and
onion; blend well. Form mixture into a loaf. Place loaf in a
2-quart baking dish and arrange bacon pieces on top.
Bake at 350 degrees F. for 40 minutes. Remove from oven and sprinkle
remaining 1/4 cup cheese on top of meat loaf. Return to oven and
bake for 10 more minutes.
